Our overwintered carrots are so sweet because of a patented process we take great pride in.
First, we grow a unique variety of carrots that are extremely sweet. We plant them in the spring and then nurse them to full maturity.
We will cover the carrots with over 2 feet of straw before the temperatures get too cold, and then wait until all the sugars from the tops go back into the carrot.
We harvest them almost a year after we plant them to get packaged and delivered to consumer shelves.
